This low-fat Pumpkin Smoothie recipe, adapted from one in About.com's healthy cooking collection, tastes like a pumpkin pie in a cup - minus the calories and fat!
- 1/2 cup pumpkin puree
- 1/2 very ripe medium-sized banana, frozen
- 3/4 cup fat-free plain yogurt
- 1 tbsp honey (or to taste)
- 1/2 tsp pumpkin pie spice
- 1/2 cup crushed ice
- 1 scoop VegEssential, vanilla
- Puree all ingredients until they are smooth and the ice is completely crushed. This smoothie serves two.
