Our simple, no-bake Coconut Caramel Energy Bites make the perfect, nutritious on-the-go snack. These delectable bites are packed full of fibre and antioxidants with the benefits of collagen rolled in.
1 cup pitted dates
2 scoops Progressive Unflavoured Complete Collagen
1 cup shredded coconut (+¼ cup for rolling)
1 cup sunflower seeds
¼ tsp himalayan salt
¼ cup chocolate chips
1 tbsp water
1. In a blender or food processor combine dates, Progressive Unflavoured Collagen, coconut, sunflower seeds, himalayan salt and chocolate chips.
2. Blend for 1-2 minutes, turning the blender off to stir as needed.
3. Once the large pieces are broken up take a heaping tablespoon of the mixture and roll into balls.
4. In a small bowl add the remaining shredded coconut and roll each ball around until fully coated. Enjoy right away or store in the fridge/freezer for a quick treat!
