Beta-Carotene-licious VegeGreens Recipe - Carrot Cake Balls

'Orange' you glad we have a mouth-watering orange recipe, today? Puns aside, the following recipe is packed with beta-carotene, a potent plant pigment our bodies are able to turn into vitamin A. These Carrot Cake Balls are not only nutritious, they also take amazing — like they're from a gourmet bakery! 

 Carrot Cake Balls

Progressive Recipe Orange


12 Medjool dates

1 cup rolled oats

½ cup walnuts

½ cup carrots, grated

1 tbsp orange zest 

½ orange, juiced

1 scoop VegeGreens, Pineapple Coconut

¼ tsp ground ginger

1 tsp vanilla extract

Shredded coconut, optional


  1. Remove the pits from the dates. Soak them in orange juice for several minutes. Once softened, place in food processor.
  2. Add remaining ingredients (except shredded coconut) to the food processor and blend until a dough-like consistency forms.
  3. With a small spoon, scoop out the mixture and roll into small balls. Optional: Roll each ball in shredded coconut to create a pretty white coating.
