Blue foods are all about anthocyanins and phycocyanins. To our bodies, those words mean good immunity and blood pressure. But to our tongues, this recipe means scrumptious and refreshing. This ice cream is basically just fruits and vegetables -- but no one needs to know that, do they?
Blueberry Nice Cream
1x can full fat coconut milk
1 cup frozen blueberries
2 tbsp maple syrup
1 tsp vanilla extract
2 scoops VegeGreens Blueberry
- Blend all of the ingredients in a blender until smooth
- Line a loaf tin with parchment paper. Transfer contents of blender into the loaf pan and freeze completely. Allow mixture to sit at room temperature for about 5-10 minutes before serving.
This is just one way to add a hearty scoop of VegeGreens, lots of delicious red foods, and energy to your diet. It's also fun to say "blood orange," so this recipe can be considered a treat for your body, your taste buds, and your lexicon!
